would be great to have an “activity log” of sorts for the organisation on battlemetrics that we could filter for each moderator (I.e, search for moderator XXX and see every note, punish, kick, ban that thay have done)
This is already possible. You can filter by UserID in the activity log like so: https://www.battlemetrics.com/rcon/activity?filter%5Busers%5D=USERID (this link is accessed from the Org page)
Alternatively, you can look at the audit log.
